Soba noodle is a Japanese noodle made from buckwheat or a combination of buckwheat and flour. These noodles are usually served either chilled with a dipping sauce or in hot broth. Like many Japanese ingredients, they have medicinal qualities too, and have been shown to help regulate blood sugar, improve heart health, help with inflammation, and possibly aid in cancer prevention.
