Chirimen sansho is produced by simmering chirimen jako (dried young sardines) and sansho (Japanese peppercorn) berries in soy sauce.  It is prepared by slowly simmering baby sardines in soy sauce, mirin, sake, and sugar. The liquid is cooked down until fully absorbed.  This simple method locks in the flavors and conserves the nutritional value of the food naturally.  Rich in calcium, protein and iron.  Deliciously crunchy and addicting, you can also enjoy it as a topping on rice, tofu, or just as a simple snack with sake!

山椒(さんしょう)是日本代表辛香料其中之一,有許多日本料理都用其進行調味。以獨特清香加上特殊辣度為特點,據說促成其辣味的山椒素還有增進健康的功效。只是要特別留意其刺激性強,不要攝取過多。將山椒的果實和小白魚乾(將小魚放在大太陽下日曬)一同炊煮就會形成京都有名特產「ちりめん山椒」!
