つぶ貝 (北海道産)

コリコリとした歯ごたえと、つぶ貝独特の甘味。そのおいしさは、アワビにも勝るともいわれます。漁師さんが「焼くのはもったいない」と言うほどに、やはり刺身が最高の食べ方です。

*Fresh out of the cold ocean, these whelks are deliciously meaty and rich in flavor.  Harvested in the midst of its season, the flesh is exceptionally succulent—sweet and slightly saline with its signature crunch. They have been carefully shucked, opened, and cleaned.  Best served as sushi or sashimi to fully enjoy its natural flavors.

響螺在日本又稱為粒貝,新鮮的響螺常製作為刺身。因其口感韌中帶脆,十分爽口,而且鮮甜無比!絕對是刺身中口感較為特別的一種。

北海道理環境得天獨厚,水質純淨優良,日本響螺,捕來就可以生食,除了做刺身壽司,還可鐵板燒或炒,相當靈活。 因當地水溫夠冷,響螺要不斷進食,儲存能量求存,故肉質肥美。


冬季期間,北海道以北的鄂霍次克海,又會有大量流冰南下漂流至北海道,海水裏的浮游生物特別豐富,成為響螺最佳食物。螺肉鮮甜度高,海水味濃郁得多。也是因為鮮甜,因此日本人吃響螺,不用來灼,反而做刺身。響螺不以大為佳,反取中型的,甜度最強,味道最好。
