Kanpachi is a type of yellowtail that is commonly served as sashimi.  Kanpachi looks very similar to hamachi except that it has a firmer texture, a lighter even more translucent color.  The fish, which is lean and mild, is at its best in early summer.  Except for Sashimi, kanpachi can also be prepared for poke or cooked in various different recipes!  

紅鰤,正面看時左右眼部上方一直延伸到背部的兩條黑綠色帶很像漢字的八,所以在日本叫做“間八”。天然的紅鰤魚捕獲量很少,因此被作為高級魚。紅鰤魚的魚肉口感韌中帶有少許的脆感,非常獨特。脂質含量比同類的鰤魚(ぶり)較少,因此肥而不膩,鮮美中流露出上品的味道。

紅鰤魚含有豐富的EPA,DHA,牛磺酸,維生素B12,菸酸的含量也很高。
