Hirame (平目) is a common fish you can find at many sushi restaurants. It’s a white fish with a mild flavor compared to other pieces you would find on the menu. The texture is soft and chewy, and slightly pink in color or dark grey veins that reminds one of faint watercolors on a canvas.   Hirame sashimi is not only suited for sushi and sashimi but also for seasonal salads.  The best season to eat hirame is autumn to winter.  Due to the mild flavor, it’s typically used as a balance against the other oiler and more fragrant fish.

平目魚肉較結實,魚油非常豐富,通常會做成壽司,或薄切做刺身以品嘗其鮮味甘香,壽司更有魚上身肉魚群邊肉之分別,魚邊油分更多,入ロ更見濃郁甘香。
