高級珍味として根強い人気の干貝柱は、
帆立のうま味と栄養がギユーっと凝縮された食品です。

古くから漢方薬として滋養強壮や血圧を下げるのに用いられて来た「干貝柱」は
やはり栄養分としも超優秀で、特にタウリン・亜鉛・アラニンを多く含みます。

そのまま食べてもとても美味しいのですが、
炊き込みご飯、お粥、海鮮ラーメン、パスタなど
水で戻してだし汁と一緒にお使いください。

The dried scallops harvested in Hokkaido are certified by the Hokkaido Federation of Fisheries Cooperative Associations, under a rigorous system of inspection and quality grading based on stipulated product standards. 

Dried scallops lend a distinctive sweet sea salt flavor to any dish.  It can used immediately to give additional depth to the same dish to which the soaked scallops are going to be added (it is lovely for sauces), or else i t can be reserved then added to other soups or stocks.

To soak, you simply need to just cover the scallops with water and leave until softened.  The length of time will vary depending on size and initial dryness, but anywhere from about 30 minutes to an hour or two will usually suffice.  Once softened, the flesh can then be shredded into thin fibers to be put in to soups, congee, stews and various other dishes.  Make sure to retain the soaking water as it will be highly flavorful and can be added to whatever you are cooking.

干貝,又名「元貝」或「江瑤柱」,是扇貝、日月貝、江浮貝的閉殼肌乾製而成的,俗名“瑤柱”。形呈短圓柱體,體側有柱筋,顏色呈深淺黃色不等,存放時間久的有些帶白霜。製作干貝時,只會選取新鮮干貝的柱頭肉加工曬乾,貝邊等部分則不會採用。

瑤柱含豐富蛋白質和少量碘質,功效與海藻、海帶接近,但它含有非常濃郁的香味,味道更可口、更鮮美,無論做主料或配料都能突出或增添菜餚的美味。

宗谷干貝:宗谷是地名,位於日本北海道,是出產乾貝最著名的地方。宗谷干貝體積較大,色澤金黃,表面乾爽,一般帶有少許裂紋,且質量較高,味道亦特別濃郁。
