Scrape the meat off of a tuna rib with a seashell(or spoon), then craft your own sushi roll. It’s called maguro nakaochi, which translates to eating tuna straight from the bone. Maguro Nakaochi is one of the most traditional Japanese delicacy.  It's medium fatty tuna meat which is specifically scraped off from bones, and finely chopped.  Served usually don (rice bowl) style.
