Japanese sea bass have shiny white flesh with an easily recognizable, broad-flaked structure and a mild flavor. They have traditionally been one of the most popular targets for Japanese anglers.  The sea bass is known to have a clean white flesh and the sashimi is beautiful compared to other white fishes.

Suzuki's flesh can be either firm or soft, depending on the cut. If cut from the belly, the meat is quite high in fat content and has a very soft mouthfeel. Cuts of meat from other parts of the fish are somewhat firm and a little chewy but still retain a wonderful, sweet flavor. 

日本真鱸,商品名為海鱸魚,又稱花鱸、七星鱸、鱸鮫,地方名有寨花、鱸板、四肋魚等。

海鱸魚是蛋白質豐富的魚種,肉質十分的鮮美,是海洋中常見的經濟魚之一,宮保海鱸球就是以它為原料做成的,非常的有名。

鱸魚含有大量的蛋白質、維A和維B群,還含有鈣、鋅、鎂、硒等多種營養物質,鱸魚有補肝補腎、益脾胃和化痰止咳的功效,對肝腎不足的人是非常好的補品
