真サバ
さばの代表的な種である「真さば(真鯖)」。日本人にとって非常にポピュラーな魚の一種であり、焼き魚・味噌煮・フライ・酢締め(しめさば)などさまざまな方法で美味しく食べることができる
Mackerel or saba is a fish eaten over the whole Northern Hemisphere and does come under many varieties and names. In Japan it is mainly called “Masaba” or “Sekisaba”. It can be appreciated as sashimi, served with grated fresh ginger and lemon. It can also be pan fried, cooked with soy sauce & sugar, deep fried etc!
日本鯖魚、真鯖,背部有不規則青綠色斑紋,腹部銀白無斑點,體長可達50釐米。鯖魚的口感其實非常獨特,大量的慢速紅肌使得魚肉有著紅肉般的緊致口感。此外,魚體內的脂肪含量也十分豐富,所以非常適合煙熏或直接烤制。
