Fresh Female Snow Crab (Seko Gani)

Snow crabs name are divided into male and female in Japan.  Female snow crabs are called "Seko Gani".  Unlike male snow crabs, Seko Gani are smaller but prized for their unique flavor, which comes from their rich roe (uchiko), and internal eggs (sotoko). The roe adds a creamy, slightly briny taste, making Seko Gani a delicacy distinct from the sweeter male crabs.

Seko gani are often enjoyed boiled or steamed to bring out the natural flavors. Because of their delicate and smaller size, they are sometimes served whole, allowing diners to savor the roe and tender meat together.
