ズワイガニの中でもいろいろな呼び方がありますが「セコガニ」という名前を聞いたことはありますか?ズワイガニのメスを指し、1年で食べられるのはわずか2か月ほど。卵の味がまた格別で一度食べると忘れられず、毎年お取り寄せするファンも多いんです。

Snow crabs name are divided into male and female in Japan.  Female snow crabs are called "Seko Gani".  Because of harvest restrictions in Japan you can only enjoy seko gani from November to January.  The best part about the Seko Gani is the egg, and fat (kani miso).  Steam or cook it in miso soup be as creative as you want!

香箱蟹,受日本政府海洋生態政策保護,限定只能在每年11月至1月期間捕獲(各縣情況略有不同)香箱蟹外形,像一隻迷你的松葉蟹,帶粉橙色,「由於雌蟹換殼次數少,每隻只有成人手掌大小,主要吃蟹膏、蟹卵,和吃大閘蟹差不多。」由於是雌蟹,蟹肚呈圓形,特徵是掀開蟹肚後,會有咖啡色的蟹卵。

日本人吃香箱蟹,主要吃「外卵」和「內卵」,「外卵」是成熟後流出卵巢、咖啡色的蟹卵;打開蟹殼,尚未成熟、呈塊狀的橘紅色蟹卵,以及青綠色蟹膏則是「內卵」。為方便客人享用,傳統懷石料理面面,會取下內、外卵,以及將蟹腳、蟹身的肉釀回蟹殼內供客人食用,各個部位結合一起,顏色相互襯托,就像個寶石箱高貴,這也是香箱蟹取名的原因。
