Hamachi Kama (Yellowtail Collar) is the tender, fatty section of the yellowtail located just behind the gills and head. It’s prized for its rich flavor and melt-in-your-mouth texture due to its high-fat content. Simply grilled until the skin crisps and the inside stays juicy. Served with a wedge of lemon and grated daikon. 

鰤魚下巴（Hamachi Kama）是鰤魚（Yellowtail）位於鰓部與頭部後方的嫩滑多脂部位。由於其高油脂含量，口感細膩，入口即化，風味濃郁，因此深受喜愛。簡單以炭火或烤爐烤至外皮酥脆、內裡鮮嫩多汁，搭配檸檬角與蘿蔔泥一同享用，風味更佳。
