真鱈の白子
Shirako is the milt, or sperm sacs, of male cod. It’s served in both raw and cooked form in restaurants all over Japan, but many Japanese consider it an acquired taste. The word “shirako” means “white children,” and it is in season in the winter. Served on top of rice, fried in tempura batter, or even on top of custard, this dish is revered for its rich, velvety texture and mild sea-like taste.
白子,是魚類的精巢,常見的有鱈魚白子及河豚白子,鱈魚白子味道較為濃烈。白子有很高的營養價值,含豐富的蛋白質及維他命B等,被日本人視為美顏補身的珍品。新鮮的白子建議生吃,口感綿密柔滑,並特有乳狀的感覺,入口即融,味道豐厚。
