市川 - 赤利尻 (Akarishiri)

"Aka" (赤) means "Red," denoting the highest grade of uni. Rishiri (利尻) refers to the high island in the Sea of Japan off the coast of Hokkaido. The sea urchin from Rishiri Island, Hokkaido is considered the best in Japan due to the pristine waters surrounding the island, which contribute to the rich and clean flavor of the uni. The nutrient-rich waters surrounding Rishiri foster the growth of Rishiri kombu (利尻昆布), one of Japan's finest kelps. This premium kelp is the primary diet of the sea urchins in the area, contributing to the superior quality of the uni produced here, which is renowned throughout Japan.

Strict environmental protection regulations limit sea urchin harvesting in this region to the period from June to the end of August.
