Aka (赤) means “Red,” a term often associated with the highest grade of uni, prized for its rich flavour and exceptional quality. Harvested from the pristine waters surrounding Rishiri Island off the coast of Hokkaido, Aka Rishiri Uni is widely regarded as one of Japan’s most sought-after seasonal delicacies.

The nutrient-rich waters surrounding the island nurture the growth of Rishiri Kombu (利尻昆布), one of Japan’s finest kelps and the primary diet of the local sea urchins. This unique environment contributes to the uni’s deep sweetness, rich umami, and beautifully clean finish, making Rishiri uni renowned throughout Japan.

To protect the local ecosystem, sea urchin harvesting is strictly limited from June through the end of August. Harvesting is highly weather-dependent, and availability is influenced by both sea conditions and raw material supply. Combined with the careful, labor-intensive grading and assembling process, this makes Aka Rishiri Uni an exceptionally limited seasonal delicacy available only once a year.
