礼文島・利尻島のウニ漁の解禁が3ヶ月程度なので、このウニを味わえるのは夏のほんの少しの間に限られます。この時期を毎年待ちわびる方も多く、ほとんどが高級鮨店や高級料亭でしか味わう事が出来ない商品ですが、そんな希少な高級ウニがご家庭でご堪能頂けます。この機会に是非「赤利尻」で食卓を華やかにしてみませんか?

Aka Rishiri 赤利尻 is one of the best if not, the best bafun uni produced in Japan. Aka 赤 is the term “Red” which is the highest grading for uni. Rishiri 利尻 is a high island in the Sea of Japan off the coast of Hokkaido. Due to the surrounding nutrients rich water in the region, the kelp that thrives in the area known as Rishiri kombu 利尻昆布 is one of the best in Japan. The same quality kelp (kombu) is also the main diet of the sea urchins that home to the area. Therefore, the quality of uni in the region is well known in Japan.
Due to strict environmental protection regulation. The sea urchin harvesting activity in the area can only be from June to end of August. The best tasting period for Rishiri uni is mid-July according to uni professionals. Since the raw material harvesting is weather dependent, grading and assembling is also a time consuming process. Therefore, it is not a product that is available on a day to day basis. The best way to secure one of these delicacy is by pre ordering.
