市川 - 白利尻 (Shirorishiri)
Shiro Rishiri (白利尻) is considered one of the finest, if not the best, sources of murasaki uni (sea urchin) in Japan. Rishiri (利尻) is a high island in the Sea of Japan off the coast of Hokkaido. The sea urchin from Rishiri is considered the best in Japan due to the pristine waters surrounding the island, which contribute to the rich and clean flavor of the uni. The nutrient-rich waters surrounding the island support the growth of Rishiri kombu (利尻昆布), one of Japan's best kelps. This premium kelp is the main diet of the local sea urchins, resulting in the high-quality uni for which the region is renowned.
Strict environmental protection regulations restrict sea urchin harvesting in this area to the period from June to the end of August. The harvesting process is weather-dependent, and the grading and assembling of uni are labor-intensive, making it unavailable on a daily basis. To ensure you can enjoy this delicacy, pre-ordering is highly recommended.
市川白利尻是全日本最高級最貴重的紫海膽之一 。
