Shiro Rishiri (白利尻) is widely regarded as one of Japan’s finest sources of Murasaki Uni (sea urchin). Harvested from the pristine waters surrounding Rishiri Island, located off the coast of Hokkaido, this exceptional uni is celebrated for its clean, refined sweetness and rich umami.
The nutrient-rich waters surrounding the island nurture the growth of Rishiri Kombu (利尻昆布), one of Japan’s most prized kelps and the primary diet of the local sea urchins. This unique environment contributes to the beautifully balanced flavour and premium quality for which Rishiri uni is renowned.
To protect the local ecosystem, sea urchin harvesting is strictly limited from June through the end of August. Harvesting is highly weather-dependent, and the careful grading and assembling process is extremely labor-intensive, making availability limited and inconsistent.
