Iio Jozo Pure Rice Vinegar is a premium junmai su (pure rice vinegar) brewed naturally in Miyazu, Kyoto, by the renowned Iio Jozo brewery. Made exclusively from 100% domestically grown rice, koji, and pure groundwater, this vinegar is fermented slowly and aged for several months to develop exceptional smoothness, umami, and depth.

Unlike mass-produced vinegars, Iio Jozo’s pure rice vinegar uses up to five times more rice to achieve a gentle aroma, rich body, and mild acidity. It is ideal for sushi rice, dressings, marinades, and pickles — a true expression of traditional Japanese craftsmanship.
