Shirauo, often called noodlefish in English. These beautiful fish have tiny, transparent bodies that grow up to only 10 centimeters long. They are both precious and pricey as the fish can only survive in brackish water conditions where freshwater meets seawater. Fishing for Shirauo symbolizes the coming of spring, their peak season. 

Typically shirauo are salted then steamed for a few minutes (which turns them from translucent to white) then quickly chilled before being served.  Sashimi (with soy sauce and wasabi), sushi, mixed with vinegeared miso paste, tempura and cooked with eggs.

在日本,幾乎在每一間超市都會發現銀魚仔的踪影,而且它是普遍日本人料理必須的食材之一。銀魚仔大概2cm左右, 這小小隻的魚仔,為何會是日本人的最愛呢?
