Distinctive from other Japanese green teas because it is roasted in a porcelain pot over charcoal, where as most Japanese teas are steamed. The tea is fired at a high temperature, altering the leaf tint from green to reddish-brown. The process was first created in Kyoto, Japan in the 1920s. Its popularity persists today. Low caffeine.

焙茶茶葉來自一般淺蒸煎茶所遺留的葉莖，再經高溫煎炒及烘培而成，因此焙茶色澤呈咖啡色，而且香氣濃烈。焙茶茶葉中的咖啡因會因高溫烘焙而降低，因此咖啡因含量比一般煎茶低，身體對咖啡因反應較大，如容易失眠的愛茶人士，則較適合飲用焙茶。
