About Male and Female Sea Urchin
The part of the sea urchin we enjoy is its gonad, which differs slightly between males and females. Male sea urchin (osu) has a firmer texture, lower water content, and a richer, more concentrated umami flavor. Female sea urchin (mesu) tends to be softer, creamier, and slightly sweeter in taste.
