The murasaki uni from Sanriku Region (Miyagi, Iwate, Aomori), which feeds on wakame (seaweed) rather than kombu, had a lighter, saltier flavor then other breeds of murasaki uni.
Kita Murasaki Uni is much larger than any of its other Japanese counterparts. Its flavor is distinct from Bafun Uni and is a lot creamier and sweeter with a light texture that virtually melts in your mouth. The rich flavor of the Murasaki also comes out midway through, which adds to an unforgettable experience.
北紫海膽又叫光棘球海膽,棘刺較長而尖銳呈紫黑色。北紫海膽個體較大,通常可以長到直徑10厘米左右。中國東北部、朝鮮半島、日本太平洋和北海道沿岸都有出產,著名產地如岩手縣北三陸和青森縣大間和北海道。北紫海膽的生殖腺大而長,表面顆粒感強,剝離度較高,通常呈現淡黃色,口感濃郁,甘甜度中高。時令季節一般夏季。北紫海膽因為海膽黃顏色較淡,也被稱為白海膽。
