Sasachou’s Natural-Fermented “Juku” Miso is a traditional Japanese miso matured slowly in old wooden barrels — a unique craft preserving the full depth of flavor. Made with domestic soybeans and rice, sea salt from the Seto Inland Sea, and pure spring water sourced from 早池峰山 (Hayachine-san), this miso develops a rich, layered taste: a sharp, invigorating saltiness, deep umami, and a mellow sweetness from the koji. Because it’s matured naturally with no added alcohol, the fresh, full-bodied character remains intact.
Ideal for traditional Japanese cooking as well as more contemporary dishes — from miso soup and marinades to dressings and sauces — this miso brings an authentic, deep-flavored base to your meals.
