Sasachou’s traditional crafted miso made from 100% Japanese soybeans and rice, with sea salt from the Seto Inland Sea — all brought together using the company’s pristine spring water (Hayachine Reisui).

This miso is fermented slowly in cedar wooden barrels, where it matures through the seasons under natural temperature changes. With a 70% koji ratio, it delivers a clean, sharp taste that balances savory depth with a subtle sweetness — a versatile medium-spicy (chū-kara) miso.

Use this traditional miso to bring out authentic Japanese flavour in soups, stews, sauces, marinades, and traditional dishes — or to add rich umami depth to creative modern cooking.

  • Miso soup — classic Japanese soup with depth and balanced umami.
  • Stews & simmered dishes — adds roundness and savoury richness to vegetables, meats, and root-vegetable dishes.
