Japanese Scorpionfish can be caught throughout the year, but the season is said to be from autumn to winter.  Body color varies from orange to red to brown depending on the depth of the water. There are white spots on the body surface and dark borders around it.  It is a very delicious fish with transparent white flesh and a moderate amount of fat.  It can serve as sashimi, steamed, miso soup making, deep fried etc. You can also prepare dashi stock from the heads and bones so nothing goes to waste!

石狗公魚體色從偏紅色到偏黑色,有很大差異。形狀與石斑魚相似,嘴巴寬大,胸鰭軟條數大多為18條,側線上方的白色斑紋不明顯,即使有也非特定形狀。頭部長著一排長刺,故又有「小石斑」之稱。懂得海鮮的朋友都知道,石狗公雖然模樣猙獰,可用來清蒸和做湯都好吃。特別是做湯的好材料,扔入芥菜和豆腐,猛火一煮,便成為湯色嫩白的好魚湯,魚肉質地幼細,魚湯鮮甜無比。
