Enjoy the engawa — the prized edge meat from natural Japanese flounder (hirame). This rare cut is beloved in sushi restaurants for its unique firm yet tender texture and rich, delicate flavor. Carefully cut and flash-frozen at peak freshness, it’s perfect for sashimi, sushi, donburi (rice bowls), or simple home appetizers.

Tips:

  • Remove the pack from the freezer. Keep the product sealed and place it under cold running water for about 10–15 minutes until thawed, or leave it in the refrigerator to thaw slowly.
  • Serve over a bowl of warm rice with other sashimi or ikura.
  • Using a kitchen torch or gas flame, quickly sear the surface for 3–5 seconds until the fat slightly melts. Enjoy with a pinch of sea salt, a few drops of lemon juice, or light soy sauce.
