Nodoguro is a premium dish made from the blackthroat seaperch, a highly sought-after fish in Japanese cuisine. Known for its rich flavor and delicate texture, nodoguro is often referred to as "white meat tuna" because of its luxurious taste and fat content.
As sashimi, the raw flesh of nodoguro is delicate, tender, and subtly sweet. It is often served with soy sauce, freshly grated wasabi, and sometimes ponzu sauce to complement its natural richness.
As aburi, the gentle searing brings out the sweet, buttery flavor of the nodoguro's fat. A slight char adds depth and a subtle smokiness, complementing its umami-rich flesh.
