"Shunka Mikan" cultivated by Mr. Toshinori Hashizume, one of the best mandarin orange producers in Wakayama Prefecture. It has a high sugar content of 14 degrees, with umami and richness that cannot be matched.
The secret of his mikan is soil preparation. He spends a year preparing the soil and pruning the trees to maximize photosynthesis. Generally, mikan quality depreciates gradually after harvesting due to a loss of nourishment from the mother tree. To prevent the loss of quality and taste, calcium carbonate is used as a protective layer just before harvesting. Calcium carbonate can also improve fruit storability and shelf life. Those are the white patches on the surface of the fruits which are completely harmless. These are the steps that are taken to maximize the sweetness and taste of Shunka Mikan.
